Va rog sa cititi si descrierea cu foarte mare atentie
1. Partea de macelarie , recomand sa fie facuta de un macelar , sa vedeti si sa participati de minim 2-3 ori
2.Partea de sare, sare mare din comert, intre 4 si 6 saptamani de sare, de obicei se vede cand a luat destula sare, nu stiu sa descriu
3. SPALAREA, pe care am uitat sa o filmez, se spala cu apa calduta, nu scufundare, spalat de sare
4. Fum , intre 5-15 zile, sa aiba o tenta de maroniu de jur imprejur, am pus 15 zile deoarece lucrez si nu pot tine fum continu
5.De ce o mancam dupa 3 luni ! pentru ca imediat nu e buna, o sa mananci doar carne cruda , sarata si afumata, are nevoie de o perioada de macerare de minim 3 luni
O data inceput jambonul NU se strica indiferent de demperatura, doar daca nu consumi 5-10 zile se usuca pu...

500g da (200g da cắt sợi, 300g da to làm da bao rửa qua baking soda cho nó mềm trước khi làm. Thích da ăn có độ dẻo dai thì khỏi cần rửa da qua baking soda ạ).
300g giò sống
15g đường (1 thìa canh)
15g hạt nêm (1 thìa canh)
15g nước mắm (1 thìa canh)
5g muối (1 thìa cafe)
3g tiêu (1 thìa cafe)
3g bột ngọt (1/2 thìa cafe)
5g bột tỏi (1 thìa cafe)
2g bột quế (1/2 thìa cafe)
10g tiêu rang (1 thìa canh)
Bột gấc, bột điều hoặc màu cam thực phẩm để tạo màu cam.
Hấp 1 giờ 20 phút mở lửa trung bình

100g curing salt
⚠️ Curing salt is different all over the world. This is for German curing salt (Pökelsalz). Please research the right ratio in your region! ⚠️

Việc chinh phục món này bắt nguồn từ chuyến đi Denver, được ăn bánh mì của tiệm bánh nổi tiếng Denver - Bánh mì Paris, họ làm món Jambon này rất rất ngon, ko có bì heo bao quanh, MX đã hứa với các bạn Denver về sẽ nghiên cứu và chinh phục để các bạn có thể tự làm tại nhà vừa ngon, vừa đảm bảo và thích lúc nào bỏ ra ăn lúc đó.

1. Partea de macelarie , recomand sa fie facuta de un macelar , sa vedeti si sa participati de minim 2-3 ori
2.Partea de sare, sare mare din comert, intre 4 si 6 saptamani de sare, de obicei se vede cand a luat destula sare, nu stiu sa descriu
3. SPALAREA, pe care am uitat sa o filmez, se spala cu apa calduta, nu scufundare, spalat de sare
4. Fum , intre 5-15 zile, sa aiba o tenta de maroniu de jur imprejur, am pus 15 zile deoarece lucrez si nu pot tine fum continu
5.De ce o mancam dupa 3 luni ! pentru ca imediat nu e buna, o sa mananci doar carne cruda , sarata si afumata, are nevoie de o perioada de macerare de minim 3 luni
O data inceput jambonul NU se strica indiferent de demperatura, doar daca nu consumi 5-10 zile se usuca putin zona deschisa
Reteta este adusa din zona Banat , localitatea Peciu Nou unde a stat bunicul meu, si s-a transmis tatalui meu , apoi am preluat eu .

1 oeuf (c'est aussi possible de faire sans oeuf)
Préparer les épices : 1 cube de légumes
1 cuillère à soupe de curry
